Roasted carp with “Suktinis”

Ingredients

500 g carp

1 lemon

A pinch of lemon spice for fish

2 tbsp of “Suktinis”

A pinch of salt

For the sauce

1 red paprika

3 slices of garlic

1 tbsp pickled capers

1 onion

A pinch of dill

2 tbsp apple vinegar

5 tbsp oil

100 ml water

A pinch of salt and pepper

Keptas-karpis

Method:

Scale the fish, gut, remove gills and rinse in running water. Cleaned fish season with salt and spices, pour lemon juice and “Suktinis”. Wrap in a foil and leave for 5 – 6 hours. Roast for 40 minutes in a pre-heated oven at 200°C. Chop paprika, onion, garlic and dill. Mix them with pickled capers, apple vinegar, oil and water, season it with salt and peppers. Roasted carp serve with sauce.
